I the "dance sheet music". Is there a name for this?

It's Beauchamp-Feuillet Baroque dance notation, first published in 1700 but in use at the court of Louis XIV for very many years prior to that date. Even today there are still choreographers who use it occasionally, but generally speaking it was superseded by other methods of dance notation such as Benesch and Laban (and nowadays, video).

It's the impression of an Spanish Zarabanda (that was quite faster) by an French composer :)
