I'm an American in the Philippines now, waiting for my filipina wife to be able to come back to the US with me. I started watching after the gold sardines video was recommended, I've never tried sardines before. I saw you pull out a spoon and I was already thinking to myself "SPOOOOOOOOON!" and then you go and bust out a clip of The Tick, simply amazing, I love it. I can't do metal spoons with food though, I definitely get too much of the metallic taste in my mouth so I'll find a nice wooden spoon to sauce up my 'dines.

Another way you can eat the Sardines is to just pour some of the hot sauce into the can itself, just cover the whole can of sardines in there, its more easier that way.

I do that with sauces that have a little more body. This stuff just dribbles off the fish and gets in the can. And for some reason, you can't really dip things into it. It just doesn't stick.

Swedish ansjovis is the best IMO, technically it's not ansjovis, more like young herring (skarpsill) with a mix of spices, brine and sugar. Good stuff. It comes in a can, but I think it needs to be refrigerated, I'll check it up, if not I'll send you some if you want to give it a try:)

I haven't watched the whole video but when you took out the Herring Roe can something suddenly occurred to me. I think I wrote you that Cods Roe is very easily available in UK supermarkets in cans. (Used to also be fresh but many supermarkets have closed fresh fish/deli counters because ??? who knows) Any way it suddenly flashed in my mind that I should try to make a hot recipe of cods roe from cans. I usually use them in sandwiches but maybe dredged in flour/egg they can also be nice - thanks for the inspiration. A new project!!!

Here's some inside-baseball. I wore my wedding band in this one because my mother-in-law called me out on how I wasn't wearing it in the videos! I stopped wearing it around the house during the pandemic because I was always taking it off to do stuff with tools. Not to mention washing my hands 20 times a day. Mrs. EMC would call the police if I gave her the sardine-eyes.

Both Jose Gourmet products i had were pretty salty. Definitely not worth the premium in my opinion. Some of my favs are: La Barca, Minerva, Ati Manel (garfish was dry as shit but the dines were great), Ferrigno, Nuri.
