Best to make it fresh, though there is no harm if u make the batter and keep in fridge overnight.. Bcoz it has dahi, its advisable not to keep it long in fridge

Apart from palak and fenugreek, u can use any greens available in your local area. I have used amaranth (also called Rajgira or cholai as it is called in Hindi) and dill leaves. In winters, even Bathua is available- you can use these leaves also. if not available, then just make it with whatever greens are available to you, or even without green vegetables, you can make this chilla
