साहित्य | Ingredients
• म्हशीचे दुध १ लिटर | Buffalo Milk (Full Cream Milk) 1 litre
• घरचे दही २ चमचे | Homemade Curd 2 tbsp
• साखर १/४ ते १/२ कप (आवडीप्रमाणे) | Sugar ¼ to ½ Cup (As per your choice)
As soon as summer begins our mind automatically starts craving for refreshing cold food items. Food items that are not just cold in sense but also, cold in nature that keeps our stomach cool are liked by everyone. Items like buttermilk, masala buttermilk, different types of lassi, kullad lassi, creamy lassi, punjabi lassi, amritsari lassi, rose syrup, lemon syrup, kulfi, thandai,mocktails etc. Since the summer is about to begin, today we are going to see how to make Matha or Masala buttermilk recipe & Kullad Lassi that we get during weddings. Perfect Lassi Recipe & Masala Tak(buttermilk) Recipe. It is so easy to make that it can be made perfectly in the first attempt only.
How to make Lassi Recipe
How to set curd for lassi
• Take full cream milk in a vessel and bring it to boil.
• Once milk is boiling, turn the gas to low and boil for 2-3 minutes and stir in between.
• Turn off the gas, and pour the boiled milk into a flat vessel or clay pot vessel.
• Keep the milk aside for sometime until it comes to lukewarm temp.
• When you see milk is lukewarm, and fat is on the top of the milk, gently turn the fat aside and add homemade curd to the milk, and mix gently without disturbing the milk fat and allow it to cool down completely.
• Once the milk comes at room temp, cover and keep it for fermentation for overnight or 9-10 hours.
• Next day you will find a very thick curd, keep it into the refrigerator for 2 - 3 hours.
• After that gently remove the milk fat into a plate.
• Now to make lassi, take some curd from the pot to a vessel, add sugar to it, and whisk with the help of a whisker until the sugar melts and you find thick smooth batter.
• Our lassi is ready, pour this to a small Clay Pots, at the top add some Malai which we had kept aside before and serve.
• Our Delicious thick kullad lassi, Mathura special lassi is ready

• दही १ कप | Curd 1 Cup
• थंड पाणी २-३ कप | Chilled Water 2-3 cups
• हिरवी मिरची १/२ | Green Chily ½
• पुदिना पाने १५-२० | Mint Leaves 15-20
• कोथिंबीर मूठभर | Handful of Fresh Coriander
• काळी मिरी पूड १/४ tsp | Black Pepper pw ¼ tsp
• भाजलेल्या जिऱ्याची पूड १ tsp | Roasted Cumin Pw 1 tsp
• काळं मीठ १ tsp | Black salt 1 tsp
• साधं मीठ चवीनुसार | Salt to taste
How to make Masala Chas Recipe
• Into a grinding jar take mint leaves, fresh coriander, green chilies, some water and grind to coarse texture.
• In a large vessel take curd, add chilled water and whisk with the help of a whisker or a traditional whisker.
• Add the required amount of the chilled water, ready ground mixture, black salt, salt, cumin pw & black pepper pw and whisk for sometime.
• Our delicious masala chas is Ready
