In your place, don't you get variety of vegetables? You keep cooking only potatoes, some shoots, dal. Why don't you make vadai, payasam (kheer) etc.

In the USA, we eat seasonally vegetation as it is available, I have noticed they also preserve what they can their on way, to late to want this food after it's gone.
