I know it's simple and pretty common but I love making chili, then use the leftovers over spaghetti or in nachos or even in a queso dip.

Chicken.... when I roast a chicken, I use the bones for broth and the first meal is roasted chicken, potatoes & gravy and a vegetable, then I use a little for chicken salad for wraps and the rest in chicken and dumplings where I use the broth....... I love using turkey this way too, but when you have all those lovely newovers from Thanksgiving!! Oh my I go happily crazy!! I make the dressing into little "nests" using muffin tins, and put a little potato, turkey and gravy in them, and top with cheese, and bake, 350° for about 12 minutes.... perfect Little lunch with all those fresh veggies you still have left from the relish trays, I also make turkey tetrazzini, turkey stir fry, and from the broth from roasting the bones, I make a Thanksgiving soup, with little dressing balls and mashed potatoes in it, turkey corn.... ya it's delicious...... I love making grilled cheese and turkey sandwiches with a twist, you add a little turkey gravy between the cheese and turkey.....game changer!!! You can do it with chicken or beef as well....just strat out making your mouth happy!!!! Ok my post is long now...opppps ❣❤

I love to grill or bake chicken and then night #1 it is the main entree with sides and night #2 it is either chicken tacos or enchiladas. Budget Bytes blog has a great recipe for easy homemade enchilada sauce. Request for you: Can you make a series of videos about healthier meals? Specifically higher fiber and lower fat. They could be budget or not. Please? Thank you!

I usually make at least double or triple rice or pasta and use it for a second meal. Rice with chicken chunks or just some gravy, pasta with parmesan cheese and butter the second time. I do a LOT of leftovers. Love using pulled pork a second or third meal for nachos or pizza!

When I make a big casserole recipe, I mix it all up as written, but then divide it into 2-3 baking dishes- 1 for that meal and the others in disposable pans. I store the extras unbaked in the freezer for later. That kind of prep allows you to buy the larger, cheapest packages of ingredients and use them up. Plus you’re all set with meals for later.

I make a large batch of chicken soup, but don’t add the noodles or rice before I freeze it into 3 portions. One batch stays soup and I add the noodles or rice when serving it. Second batch becomes chicken pot pie, I add cooked diced potatoes, strain the broth and thicken it into gravy, and use store bought pie crust or biscuits to top it before it’s baked. Third batch becomes chicken casserole- straining and thickening the broth and added noodles or rice before I bake. You can add different veggies to the pot pie or casserole ( like broccoli or frozen peas) to switch things up.

Love the pulled pork! I made it in the crockpot last night and took over half out before adding bbq sauce. We are having Cubano sandwiches with homemade Cuban bread tonight, carnitas tomorrow. It’s so versatile.

I cook meat or fish and then use it in a salad for another meal and put lots of different leftovers into a scrambled eggs hash. I also cook up ingredients and then combine them differently through the week. I always have cooked mushrooms, and maybe carrots, sweet potatoes, or roasted peppers that I put into different dishes. Another great leftover mashup is in burritos. Sweet potato, red onion and roasted pepper burritos was one of my favourite incidental discoveries in leftover meals with some cheese and pinto beans.

I make extra rice anytime I cook it, and put the extra in the fridge. Then I can make fried rice later in the week. It's one of my kids favorite meals and a great way to use leftover veggies or meat.

The salmon sounds delicious. What I do with salmon fillets sometimes is a mixture of olive oil, balsamic vinegar, garlic & herb seasoning and a little pepper. Another way I cook salmon fillets is in the instant pot with real maple syrup and a little mustard. I use a really good quality grainy mustard called Canadian maple or dijon. The salmon fillets cook in just a few minutes in the IP and they are not dry.

I know this might be a crazy question but is a pork butt the same as a pork roast? My mom use to make these all the time but she's not around to ask anymore. We all loved pork roast growing up.

There are lots of different kinds of pork roasts. Like pork loin. Pork shoulder and pork butt are the same.

I prefer a pork loin, or pork sirloin roast. But yes, pork butt/shoulder is also a pork roast. Pork loin and sirloin are leaner with more white meat ratio. Pork butt is juicier with a higher dark meat ratio. But even white meat will be fall off the bone tender if cooked low and slow. I usually add 1/4 to 1/2 cup liquid to loin roasts. Always put the fat cap up on all pork roasts. Pork shoulder/butt roasts can also be labeled "picnic roast"

I have a bit of a challenge for you. Can you come up with some soft tasty foods that someone can eat who has had throat surgery. (Yes it's me next week). I have been looking for home cooking instead of canned or boxed that tend to be unhealthy. Could you give me some ideas? No tomato base please.

Breakfasts: chia seed pudding (chia seeds, coconut milk and fruit preserves), smoothies with protein powder, cream of wheat, yogurt parfait. Other: mac and cheese but use soft/ steamed cauliflower instead of noodles for some fiber, potato soup, mashed potatoes, butternut squash soup, egg salad, tuna salad (some people mix egg/tuna salad with cottage cheese and greek yogurt for more protein). Just thought of some soft stuff your throat could handle. Hope your surgery goes well.

Hope it goes smoothly and you heal quick! I just tried the Rutabaga Cheddar Mash from The Creekside Cook blog and it was great! I decided to skip the sauteed onions and use chopped green onions instead and we used the rutabaga/potato mix she recommended. Even my picky 11-year-old liked it!

Mindy, if you use some Dijon mustard on the raw salmon using a knife to spread it on, then sprinkle your seasoned bread crumbs they will stick and mustard gives it a great flavor! I do this with my Italian pork chops.

Last week I cooked a roast, the first night we had it with potatoes and carrots, the next night we made sandwiches with it an put on our condiments of choice and served with raw veggies and chips, then I made it with a box of the Kraft mac n cheese (with the cheese pouch, not the dry) I put frozen broccoli in the boiling water (shorter than the noodles) so it would cook, after draining and adding the cheese sauce I added a can of fire roasted tomatoes(drained) and my shredded roast, after that I added it to spaghetti (instead of hamburger I just used my shredded roast), the rest of the roast has been froze into meal size packages. I love to cook this way, some days I have more time to cook than others and some days I just don't want to cook, but we always have good meals no matter what day it is and we do not feel like we are eating the same thing all the time. I find that things like this can be done with chicken and pork also. Thanks for your take on this type of cooking, I will have to try those recipes and I am wondering if my husband would like the bbq pork pizza.

Made a roast the other night, only added beef broth, s&p, then removed the fat after it cooked, pulled out half into a Tupperware container for either Barbados tacos or roast, then we had bbq beef sandwiches for dinner

I roast my pork butts in the oven. The skin gets crispy and delicious. Then after we slice and eat some, the next day, I instant pot it and shred it and use it for barbecue pork or a sort of carnitas or al pastor tacos or something like that. I have made chicken and beef stock. But, I have found that the pork broth a butt makes is one of the best broths I make.

I cook about four chicken breast in slow cooker, seasoned with chicken bouillon cubes. I make: sour cream enchiladas, chicken salad, chicken & dumplings, chicken pot pie, tortilla soup, chicken & sausage gumbo, pot stickers, chicken spaghetti, chicken spaghetti casserole, chicken fried rice, cheesy chicken casserole...etc. all comes from boiling some chicken. I usually get around four dishes from three large chicken breast( the extra large ones).

I bought some pork shoulder thinking "we're going to have some pulled pork with rice" (there's only 2 of us in my household) and then i cooked it in the slow cooker, shredded it and not only we had dinner for 2 days but also a froze a whole container, which later on rendered again two dinners when I made pulled pork baguettes out of it. It gives SO much meat and i think it's a bit on the expensive side in terms of budget meals, but it's definitely worth it.
