I've got the perfect comfort meal for you - Savory Meatloaf & Mashed Potatoes. The Gathering Table (Cooking Series) is bringing you another easy yet tasty meal to enjoy with everyone you know.
The combination of meatloaf, green peas and homemade mashed potatoes has been a meal I have been enjoying for as long as I can remember. Now, I am excited to share my recipe with you.

Meatloaf Ingredients:
1 lb - ground turkey or beef ( I used half turkey/ half ground chuck)
1/2 cup - bread crumbs
1/2 cup - crushed Ritz crackers
1 - egg
1 cup - milk (I used almond milk)
1/2 cup - ketchup
1/3 cup - diced red onion
1 teaspoon - salt
1/2 teaspoon - garlic powder
1/2 teaspoon - pepper
Glaze Ingredients:
1/4 cup - ketchup
1/4 cup - brown sugar
1/4 cup - apricot preserve
1 tablespoon - Worcestershire sauce
Additional Ingredients Needed:
4 - 5 medium size - golden potatoes
1 1/2 tablespoons - butter
1 tablespoon - heavy whipping cream (milk will do too)
1 bag - frozen green peas
Instructions:
1. Preheat oven to 350 degrees Fahrenheit.
2. In a large bowl combine your meat, crackers/ bread crumbs, egg, milk, 1/2 cup of ketchup, red onion, pepper, salt, and garlic powder. Use hands (with gloves) to combine mixture together thoroughly.
3. Transfer mixture to a 9x13 glass dish creating a loaf like shape that leaves an inch gap between the loaf and the glass dish.
4. Place dish with loaf in preheated oven. Set timer for 1 1/2 hours.
5. To create your glaze combine: apricot preserve, Worcestershire sauce, brown sugar and 1/4 cup of ketchup. Stir until well combined. Set to the side
6. Half way through cooking time spread apricot glaze over the top of your meatloaf and once complete allow to cook for the remainder of the time.
7. While meatloaf is cooking, peel and cube golden potatoes and but them in a pot of water to boil. Once boiled, drain water from pot and add butter and heavy cream to potatoes.
8. Use potato masher to turn cubed potatoes into mashed potatoes. Set to the side until ready to serve
9. Steam peas per instructions on bag.
10. Once the meatloaf is finished cooking, plate and serve!
