how do you actually get a correct bar scale onto your map?

That is a great question. Remember that your scale bar is only correct along the map's line of tangency. So, the line(s) of tangency must be on your map. It is along those lines that your scale is correct.

Ah, drop a scale bar, right click and convert to graphics, then use the measure tool set to measure a line, and set line measurement to Geodesic, then begin at zero on the scale bar, measure one mile, make note of the spot where a mile is, then drag and resize the scale bar to match that length. But make sure the scale bar is zero to one mile, not minus one mile to zero to one mile lol.
