Used by my grandmother and mother, this method is a family method for canning tomatoes. A delicious way to preserve tomatoes for the winter. In winter you will have a wonderful tomato salad with delicious spices on the table. This recipe has become one of our family's favorite recipes. Cooked with love!
Ingredients and preparation:
2.3-2.5 kg of tomatoes
Cut the tomatoes into 4 pieces
6-7 cloves of garlic (2 cloves per 1 jar)
A bunch of dill
A bunch of parsley
Greens at will
Use the stems, don't throw them away
400-450 grams of onions
Wash and sterilize the jars appropriately
I boil each jar for a few minutes
Sterilize the lids by boiling
I use 1.5 liter jars
Place 1 clove of garlic in the bottom of the jar
Black Peppercorns
green stuff
tomatoes
A layer of onions
Add 1 more clove of garlic
green stuff
Fill the jar with tomatoes
A layer of onions
dill and parsley
Do the same with the rest of the glasses
1 clove of garlic
dill and parsley
Black Peppercorns
tomatoes
Onion, garlic, dill and parsley
tomatoes
Last layer of onions and greens
Boil the drinking water
Pour the boiling water into the glasses
Close with lids
Leave for 15 minutes to allow the contents of the glasses to warm up
After 15 minutes, drain the liquid into a saucepan
I use a special sieve for this
Now the marinade should be boiled again
For a 1.5 liter jar: 2 teaspoons salt (18 g)
2.5 tablespoons of sugar
1 tablespoon odorless refined oil
Bring the marinade to a boil
Stir well to dissolve all the spices
Pour 25ml of 9% vinegar into each glass
Pour the boiling marinade over the tomatoes
Screw the jars tight
Turn them upside down to check they are tight
Cover with a large warm blanket and let cool completely
Can be kept for one year at room temperature

I would like to have a jar sanitizer pot lid that you demonstrated, but they are not available in the USA--in fact, this is the first time I have ever seen one.

@butchbroussard8468. I always just put water in my jars and pressurized them in a pressure canner and processed them 10 minutes to sterilize them.

This is the first I've seen one also, it's just steam sanitizing, why not make your own😉. I'm getting a small electric vegetable steamer with a plastic lid. Cut a hole in the lid to the size of the jar's, and maybe a tiny hole to vent too much steam, Those veggie steamers can get really hot. If it doesn't work, just need to replace the lid😁

Надо писать сколько чего кладётся не на банку,а на рассол: 1,5 л .банка- это 0.750 л.рассола,на 2 банки - 1.5 л.Значит на 1.5 л.жидкости кладём- 4 ч.л.соли и 5 ст л.сахара и заливаем 3 литровых банки или 1 трёхлитровую или 6 поллитровых банок,а уксус получается: 0,50 мл.на 1.5 л .рассола.Вкусный рассол и очень вкусные целиковые помидоры получаюся с таким рассолом: на 1.5 л.воды кладём 2 ст.л.( чуть с верхом)соли + 4 ст.л.сахара( без верха) и + 1 ч.л.уксуса эссенции 70% во время кипения добавляем в рассол- происходит диффузия( может часть рассола выплеснуться из кастрюли( берите глубокую),этим рассолом заливаем помидоры и ставим на стерлизацию на 5-7-10 мин.после закипания: это делается для того,т.к целиковые помидоры могут быть толстокожими и продолжать спеть в банке без сильного прогрева и взрываться,а стерлизация останавливает этот процесс,для тонкокожих достаточно 5 мин.стерлизации после закипания воды в кастрюле( на дно кастрюли надо класть материю,чтоб банка или банки не лопнули от нижнего жара...

That steamer lid is genius, I'm going to make one out of an old lid. The "special" strainer is genius as well, if I can't find one, I can also make my own by drilling holes in an old lid.

Have used this and a dozen other methods for tomato preservation over the years About 5 years ago we experimented with dehydrating tomatoes. Now it's the only preservation method we use. So simple and easy and the flavor for sauce, soups, and even salads is far superior to any other method.

Yo pongo todo en el frasco y lo llevo a baño María 15 min. Lo dejo enfriar dentro del agua. En cambio con este metodo se puede asegurar que esté bien tapado y no pse pierda nada.

this looks like another good use for all those tomatoes I cant find a use for when my plants are over producing! I normally make sauce and chutney, but having them as a pickle is something i never considered. Do you eat them just as a salad? or like a normal pickle; as a meal side dish - or do you have other ways of prepearing and serving them? Would love to have seen some of those ways in another video maybe ;) thanks for the upload; and the recipe!

Hola saludo desde Argentina y ví paso a paso el video y aqui en diciembre se puede hacer eso porq el ph es 7 del tomate y asegura que no se va a contaminar por el agregado de especias y ajo. Otra cosa que note es que la sal gruesa la agrego al rellenar al tope los frascos para evitar entrada o proliferación de microbacterias

*Make sure you boil the jar in full water pot to cover the lid boil for 40 / 45 minute they will last for three years. If not will spoil fast.

I'll do it with green tomatoes, they taste delicious when pickled. And don't worry as long as you don't eat the whole jar at once it isn't dangerous at all.

They have plastic mason jar lids at most stores, just drill 1/4" holes in one of those and you're good to go.

Im not sure if its safe for a year without proper water canning or pressure canning. I wish it was that simple but...looks like a good simple recipe which could be canned. I wonder if not pouring the hot liquid to for 10 min and just pouring seasoned marinade in then canning for 30 min would give same results?

That is great to know. I am doing different types of prepping these days and I am not a stickler to what out health organizations say we need to do. You are 100% correct, it is not as simple as pouring boiling water over tomatoes and onions- you can get very, very sick from doing this. Food needs to be properly preserved. The people commenting on here that it is safe, I guarantee you that they are not pouring boiling water over food and then eating it a year later without properly canning it. These videos are a fraud, most are coming from Russia. Do not do this.

@@BasimahB The Amish DO NOT open kettle preserve foods, they use water bath methods for tomatoes and fruits and pressure canning for other foods. Do you know any Amish folk? I would wager you do not or you would not make such a goofy statement about them. No Amish person I know would ever open kettle preserve tomatoes as they are not stupid people and do not want to make their families sick.

Das ist unsin. Ich mache maine tomaten in voller mit knobloch,aber keine zwibel. Zwibel bringen das Glas mit Tomaten zum werderben. Mache schon 50Jahren in gleser für den winter. Komme von Kasachstan. Von selbstversorgen für den winter 9 Monaten,und eine 8 köpfig familie. Mache feler in schreiben, nicht zur schule gehen konnte.

Bei mir kommen seit Jahren Zwiebeln rein. Da wird nix schlecht.

@Kira-ys4ou. Bitte freundlich bleiben! Es ist nicht schlimm, Schreibfehler zu machen. Ich finde es aber sehr schlimm, ein liebe- und mühevoll präsentiertes Rezept mit "das ist Unsinn..." zu kommentieren. Wenn Du es anders kennst und machst, o.k., aber bist Du die oberste Instanz beim Einkochen? Zwiebeln können such nach meiner jahrelangen Erfahrung gut mit eingefüllt werden. Wenn Gläser verderben, liegt es meist an mangelnder Hygiene.

Kira Du bist sehr unverschämt, alle die ich kenne die aus Kasachstan nach Deutschland flüchteten sind genauso wie du. Das verlogenste aber, ihr behauptet Deutsche zu sein, abet weder Schrift noch Sprache könnt ihr, aber unsere Rente, ALG, Krankenversicherung abkassieren das könnt ihr wie Weltmeister. Das ist Schmarotzertum.

Witzig wie du das Glas erst sterilisierst um dann die ganze Zeit mit der Hand darin rumzugrabbeln. Mach den sterilisationsprozess damit obsolet. Aber sonst top👍

Hello, my friend! The tomatoes will hold their shape even after a year of storage, however they will be somewhat soft as when you put them in boiling water, they will be like pickled tomatoes. You don't need to leave the jars upside down to preserve. It is done for good sterilization while the jars are hot. When they are cooled just put them on the bottom and store at room temperature.

Il y a un pb dans votre recette, vous dites 18g de sel pour un bocal d 1,5l mais vous utilisez 3 bocaux d 1.5l. Faut il multiplier ?

These non-canning preserve videos never show you what the preserved food looks like when it's time to eat it. Contrary to what this person says, you will not have a delicious 'tomato salad' you will have a jar full of mush, and it will probably make you sick. I don't care what anyone says, it is not safe to eat preserved foods that have not been properly canned. 'Our' grandmothers have not been doing it this way for hundreds of years so don't give me that crap. My grandmother knew how to can, and that's what she did. She preserved food with a water bath and a pressure canner because that's how you do it. Unless you want to give yourself botulism. Anytime someone tries to share the truth on these sites, they get ostracized and attacked. You do not can tomatoes and onions with boiling water and cross your fingers and hope for the best.

I was also waiting for the water bath and very surprised not even refrigerated . I've been canning for over 40 years and wouldn't feel safe eating this. It looks good but unfinished and my grandmother used waterbath and pressure cookers to can

The recipe is fairly similar to my pickle recipe. The best pickles recipes don't get canned because then they get mushy.

@@annking1576 What the hell does that mean AMERICAN, did you even watch or or read, she use 9% vinegar into each glass, to preserve it, or you expert at food preservation, conservation, or pasteurization, or what the hell taking 'bout, I doubt you even Mexican, let alone American, do you even know difference between 3% or 9% vinegar, I suggest you don't even cook, you will hurt yourself with cooking, you can't even follow a recipe!

9% vinegar not commonly found in US stores (3% is standard). You can make your own by slowly heating and evaporating 3% by two thirds the starting volume. Or adjust the recipe using 3 times the amount of vinegar stated and reducing the water by the same amount. They key is to get the pH down to 4.2 or less since these tomatoes will not be sterilized in a water bath or pressure cooker.
