That scene with 884 shouldn't have been possible. Invincibility in Sonic 1 lasts for 20 seconds. 20*10302 is 206040 seconds. 206040 seconds converted to hours is 57.233 hours. He would be impervious to any danger for about 2 and 1/3 days. There is absolutely no possible method for him to survive 140.8 billion years, aside from the power of PLOT CONVENIENCE.

So if invincibility bread just fires up the nervous system, it makes sense why it would become permanent after so many ivincibility boxes are used in rapid succession. The reason is the body naturally adjusts to its new state and it becomes the new normal, so he cannot die ever. He is forever stuck as an immortal or at least until something can out do his invincibility, he just needs to find the spear to his shield.
