Worked at a pizza place and the Maillard reaction isn't the only thing that makes the cheese look more brown/orange, we actually sprinkle just a little bit of cheddar on top of the mozza because it makes it look nice, not necessarily for flavor.

One of the more interesting cheeses, at least from a food perspective, is Skyr. Resembling Greek yoghurt and eaten for breakfast or lunch in Iceland it is a bit sour but usually sweetened with sugar and/or fruits or berries. It is theorised it became a popular dish in Iceland due to high demand for whey, which was, and still is to an extent, used as a preservation agent for various meat products. Whey was also widely drunk as a refreshing beverage but has become a lot less popular in the past few decades.

Some pronunciation advice: when a scientific name ends in -i, you pronounce it "eye". If it ends in -ii, you use "ee-eye". So shermanii is "sher-man-ee-eye". Great video!

If you're using the correct Latin pronunciation for genus/species, *I* is NEVER pronounced as *EYE*. "Shermanii" is pronounced as "sher-man-ee-ee"

The Chao coconut and peppercorn cheese is sooo very good. Doesn't taste like any other specific type, it just tastes good! And that's coming from someone who isn't vegan, I still buy the stuff whenever I find it. Have you tried the Myoko Kitchen stuff? Some of her flavors pretty darn good too but having to ship them across the country makes it too expensive, alas.

In Scandinavia we boil the whey down to more or less concentrated lactose. In Norway they make brown cheese" from it, and in Sweden we call it "mese", from wich we make soft whey butter or eat it just the way it is. :)

I've found the cuts between each sentence a little jarring, especially because they occur between every sentence, and other people I've showed have found it a bit fast too.

Im from Bulgaria and here we have two different words for cheese. We use *sirene* (сирене) for the crumblier whiter cheeses and *kashkaval* (кашкавал) for the cheeses with more fat that are generally more like butter and are yellow instead of white. Here if you say *sirene* everyone knows that this is the standard brined white cheese (basically feta cheese) and if you say *kashkaval* people assume that its yellow cheese that is cheddar alike, but with milder flavor. Or maybe it is closer to emental cheese Im not quite sure. Depends on your taste receptors. Otherwise if you are looking specially for cheddar, mozzarella, brie or something like that you have to specify of course. It may be harder to find any specific types of cheese, but the usual *sirene* and *kashkaval* can be found pretty much everywhere.

Cheese could well be the most amazing happy accident in human history. Man gets milk, man has to much milk to drink straight away so man puts milk in the same thing he's been keeping his water in but uses a new container as the others all have water in. He takes a sheep's stomach and converts it. Man goes to drink milk later and finds, because he hadn't cleaned out the stomach bag properly, cheese... This may well be the way we first made cheese.

At 2:21, that looks like white cheese. It's not a waste product. It's very popular in Central and Eastern Europe. You just leave the milk to sit in a warm place for a few days and squeeze out the excess water and there you go, white cheese.

jmcwd Any proof? There are tons of trans fats, saturated fats in cheese unlike vegan foods. Fruits, vegetabes, nuts, seeds, grains have been proven to reduce your risk of heart disease, cancer and diabtes. Cheese does not do what the plant foods do. And since we can get all our nutrients we need from plants, veganism is therefore, the healthiest diet to humans.

It's not bad. I didn't want to try it myself for years, but I did for whatever reason and I find it to be quite nice. Has a slight twang to it that's pleasing as a dressing (for wings) and it's soft and flavorful as crumbles (for salads). I say if you ever go out to eat somewhere and they offer blue cheese, request it on the side so you can try it out without having to be fully committed to the dish against your will.

Hey SciShow, cheese gives me intense migraines. I'd love to know more about what makes this happen! Doctors haven't been able to tell me much more than, "yeah. I've heard that can happen, especially with sharp or aged cheese." I am so curious about this!

You are tyramine sensitive. It's one of the compounds that increases with cheese maturing.

Funny how this subject popped up just now.. Just a couple days ago I realized I can understand basic astrophysics but had no idea how cheese was made and did all kinds of reading up on it. Now, here you are^ The episode is missing an aspect that would have been worth putting in though. Rennet. You never told us about the magical ingredient you add to milk to kick start the transformation. I for one had no earthly idea we needed baby cows to make cheese and now, most others still won't.

Acid-set cheeses need no rennet... just acid, heat, and some time to press out excess moisture after the curds are separated from the whey. They're quick to make, you can add all sorts of flavorings to them as you please, and they can be done in any firmness from a nice spreadable cream-cheese consistency to a nice, solid (but still soft) block good for finger-food snacking or frying/grilling (these don't melt!) for sandwich or other use.

My mother used to work for Kraft Foods, so cheese was a staple in our diet. She once brought home some limburger cheese, and it stunk to high heaven, worse than nasty feet! But I tasted it, and it was surprisingly delicious!

With dairy products I can see where they are coming from, ethically I mean, but I don't see it with eggs (the concept of eating eggs, I get the outcry against the egg industry and it's awful practices, but you can get eggs elsewhere). No one makes the chickens last the eggs, they're gonna lay no matter what. You're not killing a living creature, the eggs aren't fertilized if you keep the roosters away. It's just a cell on the ground that the chickens are likely to ignore completely, at least the chickens I've been around. I don't get what the moral objection is.

I talked with someone who is Vegan and they said you have to figure out where you want to draw the line for what you feel is acceptable and not. I talked with a Vegetarian and he said you can be a partial-vegetarian, like only giving up certain meats or only cutting back on how often you eat meat. Sure you can't be considered 100% of one of these, but it is all about how important you feel it is. As far as I know, once you are an adult living on your own, you aren't forced to become a Vegan or Vegetarian and since the problem with the treatment of animals used to produce food, is usually directly related to the quantity, if you reduce the quantity, they can increase the treatment and care of the animals. It's very interesting when you realize you don't have to be 100%.

If you can, I'd recommend going to your local grocery store and asking for recommendations at the deli. They'll be able to help you out.

I used to stick with basically nothing but mozza or cheddar, but I've been trying a bunch of new cheese lately. Some are great, but some are... well, the video did a good job of explaining that.

msblanc i doesnt realy matter that you dont like them. volkswagen hold a very big part of the globel market of cars. especially in europe. like 50% of all cars is either volkswagen or a company owned by volkswagen. and gouda rules!! maby i am biased because i am dutch. but gouda is my favorite. i eat it on bread(slightly riped). most of the time i made it into a tosti(grilled cheese). and i also like to eat it when it is realy old cheese. a couple of week ago i found a very nice gouda at a farm sell. it had been riping for aproximet 3 years. that flavour is soooo good. but i dont buy it all the time as that whould gain me to much waight lol. if you ever get the change to eat 2-3 year old gouda. do it!!

Note: unpasteurised or pasteurised cheese can have bad bacteria like e coli. Saying that pasteurised is safer means nothing. Lots of cheese like French, Swiss or Italian are unpasteurised, they are not harmful to the public. The main reason to pasteurise the cheese is to be able to create a same flavour profil which is more difficult with unpasteurised.

I lived in the UK and fell in love with Red Leister. It's that sharp kind of cheese that almost stings the roof of your mouth but it's delicious and I can't get it where I live in America. :-(

My 2cent:, the proper way of naming species is to write the the full name, e.g. "Propionibacterium shermanii" and then if you need to name it again, you can write "P. shermanii". Cheers!

Norwegian Brunost ("Brown Cheese") is also made by the leftover whey from regular cheese making. Norway having been a poor country for most of its history (before the oil that is), it was important to use every last bit of every resource.
