Krista, what is your baking temperature and time? It looks like you start with a cold Dutch oven.

I preheat my oven with my dutch oven inside for 1 hour at 500° f. I bake with the lid of the Dutch oven on for 20 minutes at 500° and then I remove the lid and bake for another 25 minutes at the same temp.

How do you score without the dough getting all jiggly and slightly deflating? It looks like your dough is so firm?

If you’re having deflating issues it may be because you’re over proofing your dough. Also cold dough firms up a little and is much easier to score than room temp dough.

@@kristascottage7274 Awesome info! Thanks for giving me these tips! When I put my dough in the fridge it makes for a really dense loaf, yuck! Maybe I'm putting it in the fridge too long?

The fridge shouldn’t be changing the crumb of your dough. I’ve kept them in the fridge for 4 days with no problem. Dense on the bottom and big air bubbles on the top would be under proofed. Dense all the way through is an over proofing issue.
