The reason for chilling it is to make it firm enough to work with it when spreading, just to avoid it sticking. But if you can handle it’s stickiness then no need for chilling

The butte, powdered sugar and flour is what gives it the crumb. This recipe doesn’t need any leveling agent, however if you add any leveling agent such as baking powder and co, know that it’s going to affect the final result, which is the texture and taste of your cookie
