I'm a Fishmonger at a Whole Foods, started a little over a year ago, and most of the knowledge I've gained in how to deal with fish properly has been from YOU Kimagure! You have taught me immense amounts of things! When we process Flounder I end up with a couple pounds of Flounder Engawa which I have used a couple times now to make the most delicious fish burritos. Thank you for your excellent videos. I have learned a lot from them. I need a better knife though...

It is amazing how so much really really tasty parts of fish are overlooked by the Western cultures! I always wonder what they do with all the snow and king crab bodies!? I can only find legs even at restaurant supply stores!

In Borneo we call this Kerapu Tikus (Mouse Grouper). Very rare and one of the most expensive fish here. Never taste it but others say it is delicious when steamed.

At about 7:45; I completely and absolutely agree with the translated philosophy, and my own experiences, that by spending 10,000 hrs, or about 5-7years at 4hrs/ day any one can become good at something/anything, but importantly, learning all the while when doing…the ideology is the same to me as to you as if I found my own rarest item…truly knowledgeable, helpful, inspirational and entertaining videos
They are rare because they have a short life as female and become male after so they just don't lay eggs for long hence they are protected in many waters. The fish U do find are mostly captive bred.

I love your videos. I live literally right in the MIDDLE of the USA. So fish is a luxury. Your videos really show how much is out there and makes me realize how jealous I am. Keep up the amazing work!

You can make a pond or aquarium to grow your own fish. it's very easy to do.

Here we call it 老鼠斑, 老鼠 means mouse (probably referring to the shape of the head), 斑 or 石斑 is the general name for grouper family (eg: 七星 斑 = coral grouper, the word 斑 itself means patterns/spots/marks) It was quite the popular fish during the time when i was a kid, like if you have that in a restaurant it is always steamed to preserve the original taste, and that feels like a very high class experience. I could see it in almost every chinese restaurant, but it doesnt seem to be like that any more in recent years.

yes its called a mouse grouper. Lau Shu pan. Some called it leopard groper too. I am from Singapore and this fish is considered a delicacy and quite expensive too. Totally agree steaming it would be the best way to eat it. Expensive fish too in Hong Kong
