TA Lau place the butter cream bowl couple of minutes in a bowl with warm water and stir well

I use a metal bench scraper and heat it in hot water, blot the water off and drag to smooth without digging in. It just kind of melts the top layer.

I totally enjoy your videos, they are amazing and I have learn so much. Your SEBC is the best thing ever, I used to make the Swiss Buttercream or the Italian but after making yours I wont go back, it is easy to make and delicious and in my area where it's hot and humid it holds under fondant very well, plus everyone that has tried my cakes go crazy with the buttercream flavor. I live in a hot weather, does placing the cake in the fridge with the final coating would make the cream get like watery on the outside once I take the cake out of the fridge? +Sldp90 hi, thanks! I recommend my buttercream the most. Recipe link is in the description box. Cover the chilled cake lightly in cling film or place in a lidded container before bringing outside to avoid water on the cake, remove cover after the cake is close to room temperature 🌸

Is this smbc? I have to use American “buttercream” which is shortening based because of the cottage food laws. I have a lot of problems with air bubbles as I’m frosting even if I take the time to squish them out with a spatula.

If you chill the cake and scrape again, isn't the buttercream too hardened scrape off? Is the scraper warm? Anytime I've tried to scrape chilled buttercream, it comes off in chunks

hi, sorry for not seeing your comment til now... YT put it in spam for some reason, I guess the length... anyway SEBC is a very easy recipe to follow, you literally cant go wrong as long as the ingredients, quantity and temperature are right. If it's too runny chill the bowl a bit then continue, if it's not mixing or too lumpy warm it a little with a hot towel on the side briefly then try again. If you dont have a microwave and find you have air bubbles try hovering the bowl over a saucepan of bubbling water for a few seconds, then stirring, and repeat that until the buttercream softens. Not too long or it'll melt! good luck 🌸👍😊

Fancy Favours & Edible Art my hubby works for Kimberly Clark who makes the Viva towel you use to smooth your cakes, however here in Australia we only have the impregnated viva...not the plain smooth towel that you use, which is a bummer for Aussie cake decorators 👎🏻😕

+Adele Rae Collins ah I see, yes I know the paper towel method for crusting buttercream, I hear your can use washed and ironed sewing interfacing fabric instead... sebc doesn't crust though so paper towels can't be used to smooth (just for clean up, as per all cakes!) 👍🌸

+G Wij you're welcome! For a cake that size I'd probably make 2 batches of my buttercream although it's unlikely you'd need it all, unless you like to use a very thick layer - I usually make more than what I need store the rest for another time. Hope that helps! 👍🌼❤️

Are you using the same buttercream to crumb coat? because in 0:56, the buttercream is noticeably whiter.

+Joanne Chew I am, it's the softening which makes the buttercream slightly darker in colour because it reduces the air in the mix, which is what makes the buttercream look whiter. Butter itself is yellow but pales when you whip air into it, so the reverse would also be true 🌼
