How do you prevent the broccoli from getting long and stem? That's what mine did

Generally the answer is the soil temps get to hot as the heads begin to form. Anything over 70 degrees can start them bolting. A thick layer of mulch helps reduce the temps. I had the same thing happened to my first planting of broccoli last year. The temps were just too high. I did replant however and the weather cooled at the right time and then it was successful.
