In this extreme grocery budget haul I'll be saving money on groceries and I'll try out 2 dishes that I've been wanting to try for awhile. I made a delicious cellantani dish and vegetable sushi along with some other meals.

Sushi Rice
Ingredients · 2 cups sushi rice · 2 tablespoons sugar · 1 teaspoon salt · ⅓ cup rice vinegar.
Use any vinegar. Melt sugar in vinegar with salt, then mix into rice.
Cellantani Pasta Dish
1/2 box Cellantani=3 servings
Cellantani or Cavatappi noodles =same thing
zucchini
red bell pepper
yellow bell pepper
garlic
mushrooms
favorite pasta sauce
soft mozzarella
italian parsley to garnish
lemon - squeeze to garnish
great add ins = olives and sun dried tomatoes
TOFU STIR FRY
1 Big block extra firm fried tofu
yellow bell pepper
red bell pepper
onion
celery
garlic
Sauce
1/4 cup Sesame Oil
1/4 cup low sodium soy sauce
2 tablespoons brown sugar
Fry ingredients in small amount of oil. onion and celery first, then throw in the remaining ingredients. Cook quickly on high heat until crisp tender. Add sauce at end stir until thickened and coating vegetables. top with sesame oil
garnish with black or white sesame seeds. This is for appearance only and doesn't impact flavor
Try with broccoli and any other veggies you like.
Pumpkin Oatmeal Bars
2 cups oatmeal (instant or regular)
1 can pumpkin
1 tsp baking powder
1 tsp vanilla
1/2 tsp cinnamon
1/4 tsp salt
1/4 cup brown sugar - or more if you want. Try tasting it before you add the egg to see if it is sweet enough.
1 cup water
1 egg
Bake at 375 for 25-30 minutes.
BREAKFASTS & MID MORNING SNACKS
6 servings pumpkin oatmeal bars (1 egg inside)
2 servings sweet potatoes and 2 eggs served with avocado and cilantro
3 servings oatmeal with apples
3 hard boiled eggs
1 banana
LUNCHES
3 servings cellantani pasta
2 nori rolls w ponzu sauce
tofu and peppers stir fry
egg with sweet potato, avocado, and cilantro
DINNER
3 servings cellantani pasta
1 nori roll
1 rice with vegetable stir fry
2 TOFU stir frys
SNACKS & DESSERT
