I find that red food-dye works just as well, with regards to colouring the mince, if ya can't find the powder. Just putting that out there, y'all.

Excellent. Made my first batch yesterday and cooked two today (in a Tepro steak grill, on the skewers, rather than on a griddle pan). Highly recommended.

And made a further batch this evening, this time substituting Patak's (catering) Madras kebab paste for Syed's Kashmiri masala. Acting on a suggestion from my wife, I then extruded the kebab mix using a piping bag, which works absolutely perfectly. Not sure whether I prefer the Madras paste or the Kashmiri masala version - I shall have to try them side-by-side (no great hardship !).

When making the keema meat for a naan, do you need to fry it off a little before it goes inside the naan, thanks in advance for your reply Syed.

Nah you don't need to fry them. Just put the keema inside the naan dough carefully. Then press gently all the way around the dough.then roll it with the rolling pin.

Hi friend. I have just made a batch for tomorrow. My question is, How do the restaurants keep them so moist when they are cooked?

When you cook them brush 🖌️ melted butter on top. In restaurant after we cook them in tandoori we put them on hot sizzler with onion and little bit oil. Then just before we serve it we add lemon juice to sizzle

I cannot find kashmiri masala paste anywhere , I am down to my last half jar..sold out everywhere , not even available on pataks website ? Is there an alternative ?

Kashmiri paste you can make it . 5 tbsp of kashmiri chilli powder or paprika 3 tsp of coriander powder 1/2 tsp of chilli powder 1 tsp of cumin powder 1/2 garlic ginger paste or powder 1 tsp 1/4 tsp of salt 80ml of repseed oil or mustard oil 1 tsp vinegar (optional) Mix all the spices in glass jar with the oil n vinegar. You have to store it for longer to get the flavor out.

Then just use the tikka paste..its fine..add some kashmiri chilli powder mix it with mustard oil and add it

If you've only done 500g. How much quantity do they make in a Indian restaurant then?

Adam its depend on how busy is the restaurant and how much do they use. When i was working we use used to make keema 2kg and 2 times a week. So about 4-5kg a week. But some weeks 3kg. Its depends on the business.
