I am not very fond of the kuzure kesa gatame where you just grab the far shoulder. it leaves WAY TOO MUCH space for them to move that arm all over the place and doesn't control it effectively nor create as much pressure on the shoulder & upper chest. If you shoot your underhook deep and wrap the shoulder then put your hand behind your head, that secures it and makes it an almost instantaneous tap should he try to do anything to defend using the far arm- you can immediately americana, wristlock or armbar him. The big thing about the paper cutter is blocking the shoulder rotation & smashing any of the defenses and ensuring that they look up or away so you can get nice bite on the neck.

I absolutely agree with you about grabbing the shoulder, and I have several videos where I discuss the deep underhook and crawling with the fingers to isolate the far shoulder. For this particular paper cutter setup, however, you can consider this to be a trap, since I am actually wanting my opponent to feel like he has mobility with the far arm. When you have the deep underhook (assuming you can get it) you tend to be higher towards his head, and it can be difficult to insert for the paper cutter. Of course shoulder locks and other submissions become easier, but sometimes it can be difficult to get that deep underhook.
