would they ever ask us to arrange the array in ascending order using the bubble or selection method specifically requiring us to remember both or would they not be that specific?

In exams they ask you to sort the array, not to use a specific sort so you only need to memorise one. I suggest the Selection Sort as it is easier. However you do need to be able to identify and know how both sorts work for theory exams.

Yes, they do the same thing. I personally find it easier to remember the Selection Sort. There are many different algorithms for sorting. Each have their own benefits.
