The reason you are receiving the message that you see is because you don't have WooCommerce installed. You must have WooCommerce + WooComemrce Addon for WP Courseware. Once you install WooCommerce the message will disappear. WooCommerce can be found here: wordpress.org/plugins/woocommerce/

Is there a way to add a questionnaire before they purchase the course? For example, if I’m making a workout course with a custom meal plan can someone fill out a questionnaire (gender height weight etc) so I can know what meal plan to give them?

You could use any for plugin like Ninja Forms, Formidable, or Gravity Forms to question your customers. Then you can manually enroll the individual into a course based on the meal plan. It would seem that manual enrollment would be the best option since you have to determine exactly what to give your customers.

So, with these plugins and WooCommerce Subscriptions or Membership add-ons, I could make my site become my own version of Patreon?

WooCommerce does have the subscriptions plugin that would allow you to create recurring subscriptions for individuals. I'm not sure if there is a way to allow the giver an option to customize the amount, but WP Courseware can automatically enroll a user based on product purchase so essentially you can do something similar to Patreon.
