You guys made me laugh like crazy... because I see so much of me and my husband reflected in you guys! I once asked my hubby to help me fold some clothes after I pulled them out of the dryer. It kind of drove me crazy the way he was folding some items, so I would unfold them and fold them my way. Hubby said, "I folded those wrong huh?" And I said, "Not wrong... just... different." Not only stir in one direction, but after, pick up the mixture and slam it against the cutting board a few times. It sounds like nonsense but it works! It improves the texture of the filling makes the filling chewy. I learned this from an old Cantonese Bobo!!

Thanks for another great video! Don't argue with her about stirring in one direction! There is actually a very good scientific reason for stirring the pork in one direction. By doing so, the fibers in the meat are aligned in a consistent fashion. The result is a smoother, more tender texture when cooked. True story.

I make a (super wrong probably) version of these. I use sweet italian sausage cuz it seems to have some similar spices to Asian food (fennel and stuff), and then I add TONS of veggies chopped really finely- cabbage, bell peppers, carrots, onion, garlic, tons of ginger- then soy sauce, rice vinegar, sesame oil, and some Kikkoman Thai Style Chili sauce (fave brand- it’s thick and spicy!). And then I cook like you do, or I freeze. They’re soooo good but I know they are not authentic!! I want to try yours!!!!! I also use square wonton wraps (only ones I can find in my town) and pinch them into little pyramids!!! I think with dumplings, they are ALL delicious because the main ingredients are LOVE, TIME, and PATIENCE!!!!!! Love you SK!!!!

You should try pinching them into "ghost" shapes with the filling as the head of the ghost. All the extra flaps of wrapper make delicious textural wrinkles that are very pleasant to eat and pick up sauce very well!

Hey just FYI the one direction thing is because when mixing the minced meat you want the meat (mainly the protein) to create long strands or strings within the dumpling filling creating a bit of a "springy" effect.

Btw anyone actually wondering why the filling is stirred in one direction, it's to develop the protein and give the filling its texture. Essentially, the protein structure breaks and rearranges as you mix and you must stir in only one direction for it to do so correctly.
