What amazes me is how much food they make. Where do all these customers come from? I don't think I see these many customers in NYC, Mexico City, Tokyo, or any food festival in the U.S. Are these local people or tourists?

My friend, at the Camogli (Liguria) fish festival, near my house, this year 30,000 dishes were offered to the public for 3 tons of fried fish, plus side dishes and first courses, tourists and citizens.
