Thanks a lot ! LED_BUILTIN was it also for me, but I face another Problem now: 0x3C is the only address where I get the OLED running where should 0x3D be addressed for 128x64 Any suggestions?

You didn't show Adafruit demo. It is really slow, much slower than regular Arduinos (ATmega328), because esp8266 doesn't have hardware I2C support.

Exactly how slow is the i2c support? I want to connect an ADC converter for a joystick and need to know the lag time.

You shouldn't have problem with this, it's not that slow. The problem is evident only if one sends large amounts of data across the bus, such as screen matrix of pixels. If there is any worry, you can use esp8266 analog pin (A0), with voltage divider if input would be 5V, and an analog multiplexer such as CD4051.
