I recall my grandma had mentioned wearing gloves with certain brocades but I can't remember now if she said they were silk or cotton. I am amazed you made the dress despite fabric possibly snagging or ruining the design of the strawberries because of the loose threads. Im not criticizing you whatsoever on your work because it is amazing but I would like to offer a helpful suggestion to anybody else who will be working on fabric like this to make the Marie Antoinette strawberry dress is to make sure everything is fully hemmed and lined because you really dont wanna ruin a fabric that pretty and that expensive. I love how you showed how you hemmed the skirt with silk taffeta which is a really smart way to do a historical hemming method on these types of gowns especially on fabrics like this. I imagine the original dress being hemmed/lined with a white silk taffeta since the background color is white. Great job Sewstine!!! Keep up the amazing work!

the answer to the problem of sewing floating thread jacquard fabric is to mount it onto silk organza, ie cut two layers with the same pattern piece. it does increase the price of fabrication, but it is a couture technique still used today.
