It seems that 坐不上8点的飞机 is similar to 来不及坐8点的飞机. I wonder if there is any difference. Or if either one is preferable.

Based on context, they can mean the same thing. They both can mean "missing the flight" due to time, but the first sentence "missing the flight" can also be due to other reasons.
