I like this pastry very much, natural coloring, with pandan sweetness, with fresh shredded coconut, soft taste, a combination of sweet and salty, very delicious!
Pandan Lompang Cake /Pandan Kosui Cake
Rice flour-60g
Tapioca flour-30 g
Caster sugar-80g
Pandan Juice-180ml (8 pandan leaves cut into sections and add 200ml water, beat into juice with a food processor)
1/2 teaspoon of Lye/Alkaline water
p/s: (If you want a softer taste, you can add 70ml of water into the flour mixture)
Coconut layer:
Shredded White Coconut-50g
Salt-pinch
Steam for 5 minutes.
