MOONG DAL MUGHLAI
Preparation time Over night
Cooking time 55 minutes
Serving 6
Ingredients
1 ½ large cup Moong dal, soaked, (मूंग दाल)
1 ½ tbsp Ghee, (घी)
1 large Onion, slice, (प्याज़)
1 tbsp Syah jeera, (शाह जीरा)
Salt to taste, (नमक स्वादानुसार)
1 tsp Degi red chilli powder, (देगी लाल मिर्च पाउडर)
¼ tsp Coriander powder, (धनिया पाउडर)
4 cups Water, (पानी)
For Tempering
1 tbsp Ghee, (घी)
1 tsp Oil, (तेल)
3-4 Cloves, ( लॉन्ग)
1 tsp Syah jeera, (शाह जीरा)
1 inch Ginger, chopped, (अदरक)
6 Garlic cloves, chopped/ crushed, (लहसुन)
2 large Onion, chopped, (प्याज़)
3-4 Green chilli, chopped, (हरी मिर्च)
¼ tsp Asafoetida, (हींग)
1 tsp Degi red chilli powder, (देगी लाल मिर्च पाउडर)
1 tbsp Coriander powder, (धनिया पाउडर)
½ tsp Turmeric powder, (हल्दी पाउडर)
2 tbsp Fried onion, (बरिस्ता)
½ cup Curd, beaten, (दही)
For Garnish
10-12 Coriander sprig, (धनिया पत्ता)
4-5 Mint sprig, (पुदीने के पत्ते)
1 tbsp Fried onion, (बरिस्ता)
1 small Butter, cube, (मक्खन)
1 Silver leaf, (optional)
Process
In a thick bottom sauce pot, add ghee, syah jeera let it splutter.
Add onion and saute on medium flame. Add soaked moong dal and saute well.
Add salt to taste, degi red chilli powder, coriander powder, water as required.
Cover it with the lid and cook for 20-25 minutes on medium flame.
For Tempering
In a kadai, add ghee, oil, cloves, shay jeera and let it splutter.
Add ginger, garlic and saute well until the garlic turns brown in color.
Add onion, green chilli and saute well. Add asafoetida, degi red chilli powder, coriander powder.
Add turmeric powder, fried onion, curd and saute on medium flame, until the masalas are cooked properly.
Transfer the cooked moong dal into the tadka and mix well.
Garnish it with coriander sprig, mint sprig, fried onion and butter.
Serve hot.

Tried this today and it came out very well! It was quite flavorful. The tiny amount of mint leaves and dhania in the end made a big difference in the flavor. We enjoyed having it with some simple veg pulav.

I was just wondering the other day apart from dal with baati choorma, where can I use green moong. Happy to see this dish. He loves cooking so much. Watching him enjoy cooking is so therapeutic. Btw I have never seen anyone cooking dal with so much love.

Tried today and it came out really good. The yoghurt turned out to be really magic ingredient here. It gave that creamy texture without effort but again not really in a bold way. This is not a Mughlai moong dal....this is a symphony...Like Beethoven's symphony....the flavours, the taste, the texture.of the daal are amazing....this is by far my most FAVOURITE DAL. I did the "biji" version with 🍅, instead of yoghurt and it was wonderful. Kudos RB for introducing me to Malwai moong dal mughlai...mazaa aa gaya

Very nice dish, I tried successfully. Very delicious, every body in family liked instantly. Generally South Indian dals are different with tamarind or tomatoes. Even moong whole is eaten as salad, or others this is new, thank you🙏

Hey RB, am From Sri Lanka and love Indian food... And I love Dhal Makhni... For us also it's easy to find mung than another dual.. Followed every step the exact same way you mentioned... This dish came out mind-blowing... And I realized the saying “The way to a man’s heart is through his stomach” coz hubby loved it... Am gonna ma nachos tomorrow... Fingers crossed

This recipe is absolutely delicious! I grew up eating Gujarati version and this was a complete deviation yet most memorable. I served it with a dallop of dahi as a “stew” in order to avoid carbs.

Wow, will try!! Indians have so many amazing foods, if only somebody can pass the knowledge of these amazing kitchen skills and secrets. My question is, could you please explain the different stages of cooking with/processing milk and its different products that can be made out of it, from cheese to sweets to savory etc. Great help this would be, thanks in advance 😊
