Can you please tell what is the indicator of good quality meat? When I put the meat in to fry, it let loose a lot of water :&

Always ask your butcher for nihari meat, which is shank meat. And get big chunky pieces of meat with extra bones. And always fry on high flame for good 15 mins with ginger garlic.
