Guyanese Black eyed and Channa cook up rice #vegetarian #ital

Ingredients for cook up
2 cup rice
1 cup channa soaked overnight and boiled until tender
1 cup black eyed peas soaked and boiled until tender
The milk of 1 coconut (4-5 cups of water)
2-3 carrots
1 lg onion
4 green onions
1 hot pepper
15 stems of fine thyme
3 head Bok Choy
1 1/2 tsp salt or salt to taste
1 tsp black pepper
1 tbsp cook up seasoning (optional)
2 tbsp Chinese sauce (optional)
1 tsp Chinese 5 spice (optional)

Thank you for your Guyanese version of cook up. I'm making ours now; we have our own recipe but I love to watch, learn and experiment with other peoples recipe. I changed a few things. I didn't add channa, cook up seasoning, Chinese sauce or Chinese 5 spice. I've never added bok choy so thank you for that suggestion. Glad I had some to put in. I seen another KZbin person put a small amount of liquid smoke in theirs and I'm trying that to. If ya can't get it cookin outside over a nice wood fire, maybe this will help get that flavour. I'll let you know. Smells divine in the kitchen! Thanks again for this Vegan recipe! We don't miss the meat at all with all this flavour! I'll let you know what my Guyanese husband thinks of it. From his white Canadian wife of 45 years! lol This from Google: One cup of cooked black-eyed peas has 13 grams of protein and a whopping 11 grams of fiber-almost 40 percent of the daily value of 28 grams".
