As a former Surgical Instrument Repair Specialist we were tasked with sharpening amputation knives and bring up an edge on various instruments. This is a an excellent set up. We used to use an industrial belt sander and free handed our angles (you just practiced a lot to get the feel). We had access to 80 grit but ended up using 120 or 240 grit. This brought up the burr real fast and we had to be careful not to cut away more than necessary. I then took it to a high speed cloth buffing wheel that was loaded with white compound and carefully deburred edge. This gave a razor sharp edge. I currently use a at home Work Sharp Ken Onion and it does a decent job but the old school method worked in providing a razor like edge. However, perhaps this is best since I would always have some reluctance on having a razor edge handled by anyone other than those in the sterile processing or surgical services. Hence, I would intentional knock the edge down a bit for home use. Regardless, I like your set up with the belt flex to get the convex bevel and the jigs used to set the angles.

opichocal yeah, this unit keeps the blades a lot cooler and the belts are a lot cheaper! So it pays for itself real quick, and does a much nicer job. I have even sharpened mower blades on it. Not the best tool for that job but will work. Thanks for taking time to watch and comment! 👏

Would this be considered a good system for all kinds of knives? Including kitchen knives?

Yes and no, I recommend most kitchen knives to be sharpened by hand, however thicker German style knives would be good. Thin Japanese style knives don’t require much steel removal and is best done by hand. :)

But for most users it would be good. Over time with sharpening a knife needs to be re-profiled... meaning thinned out to keep the blade geometry. This is can be done on the sharpener but best on a commercial knife grinder.

How to set the angle in this system ?

They are pre set but you can adjust them if you want. There is a lock nut that holds them in place. I will do a video in the future.

Not sure about that machine, the guide rail is stationary.
