Why do you alternate sides rather than forming a burr on one side then the other before you move up on your stone progression? Is making a burr on one side just a simple way of knowing you have made progress?

Hi, Stefan will not reply given that he passed during covid. In other videos he explains "plateau sharpening" AKA burr minimization technique. In essence, raising a burr implies thinning the edge to such degree that the material starts bending (this is burr). But this weakens (stresses) the material, so once you remove the burr, the remaining edge material will not be as resilient and therefore the edge will not last as long as it would if you avoid burr formation. In other words, raising a burr is oversharpening. As a side note, q burr might not be raised is stones that release much abrasive, since this mud/slurry/floating abrasive will grind away the burr before it is perceivable.
