Great video. Which of the Shapton pro would be equivalent to the Nan 3000 you were using? I think Shapton goes from 2k to 5k. Can't find a 4k.

My Naniwa Pro crack like spider webs. The 5k and 10k are ready to fall to pieces. Even taking care of em, doesn't always prevent it. I'll never purchase Naniwa again. Even my 1k has shown issues, although they lapped out, and haven't returned. That seems to be the key to keeping them healthy. Lapping before, or after, each use. Remove that water logged layer and let em dry as normal. Regardless of my issues, hope yours work out better. Fantastic job as always :)

Oh man that sucks to hear that the pros do it too. I have never had a single issue with the Shapton's and have been using them for quite some time. Really appreciate the kind words my friend!

Chosera 800# and 3000# are really amazing stones.. 400# and 1000# are also great.. ❤enjoy it🙏

Is Using dish soap and water ok on all stones and diamond plates

I don't use it on water stones that need to be soaked before use and other stones like oil stones but for splash and go type water stones and diamond stones I've never had a problem. On diamond plates be sure to dry before you put away/store. I normally run them under very hot tap water at the end to help em' dry faster.

What is the difference between the Naniwas and the Shapton ceramics? Can you sharpen all types of steel with the Naniwas?

Not a whole lot, they can be used on a lot of steels however not good for the really high alloy PM steels or steels with a lot lot tungsten and or vanadium.

Appreciate it! Running the edge over my thumbnail tells me if there any Hang-Ups, damage, burrs etc.

it only uses 2 grit 800 and 3000? how about starting from 1000 then 3000?

In reality for most uses in the kitchen a good 1k stone is all you need. hey buddy, i am just about to place an order for a new knife and thought i would add some diamond emulsion in 1 micron. 7mls...........how much will that do on a 6/8" x 2 " strop ? kind regards ian, uk.

Hey ian, if I'm correct that's just under a quarter of an ounce so not a lot. Should coat it however it may soak up a lot on the first application and may not have much left for follow up applications.

Hey NW KG do you make and sell those leather strops like you sent to christy? I’d like a couple like 1x8 or 1x10” or 1x6” for hand holding. I could not find soling leather of the type you seem to use or I’d make them myself. Steve

I do from time to time however kinda spendy. I just got some of the soling leather in and have some smaller pieces left over, if you want some for making your own strops I'll sell you some, you on IG or reddit?

I have both and really like the pro's. Glass are good too, if you get them be sure they're the HR series and not HC.

Have you had any crazing issues with these stones? I want a Nan/pro2k.. I bought a Shapton pro 2k as a bevel setter for my razors and I didn't like it because they scratch deep and by the time I get to my Nan/12k those 2 k Shapton scratches stand out like a sore thumb..

No however for some reason little spots or chucks on the surface of stone have been coming out if that makes any sense. Doesn't seem to affect the edge however is kinda annoying to be honest and never had any issues like that with my Shapton's over the years.

Nice looking knife. Interested in assessment after use. I was in Costco yesterday and passed a kit of 5 kitchen knives ranging from 3.5in to 8 in incl a Santuko, Chef, Slicer a couple small paring/util knives. All but the 4.5 in measured under 200 BESS out of the box. The 4.5 may as well be a butter knife at BESS 600+. One piece design kinda like a Global. $34 for kit. Couldn’t resist. Got em home, and tested them. All have custom fit plastic edge protector. The steel is German DIN 1.4116 SS which is basically a 420CM 55 HRC. I figured WTH. Something to play with anyway LOL. Have you ever used a King 1K/6K stone? Anything I need to do differently from say a splash n go shapton freehand? Well, besides soak em LOL. I’ve noticed that trailing edge seems to rule on these slurry stones vs edge leading burr removal on ceramics. Am I imagining things there? Personally, I find the waterstones a messy hassle, but I need to help a couple people and I don’t want to mislead them with bad technique. Set me straight buddy.

Hmm,will have to check my local costco out. 😁 Sure have had a few over the years, King's are a decent Stone overall not quite up there with the Shapton and Naniwa etc. though in my opinion. Normally all they need is a short soak till the bubble stop, you can do edge leading if you're very careful however as you mentioned if the stone has any slurry on it I generally prefer edge trailing using very light pressure and as I mentioned in the video you can actually elevate it a few degrees beyond your sharpening angle to hit the bur a little better if you like. Yeah with the water stones it's kind of love hate either you love them or you hate them. I happen to love them but that's just me, weird I guess 😆

@@NORTHWESTKNIFEGUY No, I think I’m the weird one on the topic of water stones. I guess I just need to pick a couple up and sharpen on them to see what I’m missing. A good part of the world love em and they keep selling so there must be something to em. Once I touched the Shapton Pro/Glass Naniwa Pro, and Diamond Matrix I felt like I hit Nirvana and never bothered on the water stones along the way. I’ll order a couple and give it an honest whirl. If nothing else, I can use it in my 1on1 teaching or give em as a gift to an aspiring local ;) Take care. K

@@NORTHWESTKNIFEGUY No, at least not for me. I bought a king 1K/6K combo kit for each of my kids along with several other goodies and knives as Christmas gifts. But I don’t current own one myself yet. I think I have nearly every other stone know to man, but not a plain old natural water stone LOL

Have you seen the new spyderco cbn stones? I just learned about them so idk how new they are?

I have seen the new CBN stones from spyderco. For hand sharpening I generally stick with diamond, for my powered sharpeners like my tormek I use a CBN wheel on that. Diamond being made of carbon does funny things when you heat it up too much.

@@NORTHWESTKNIFEGUY I generally use the spyderco ceramics and i really like those. I have a norton 4k/8k but it's not frequently used. What's a good diamond stone and a good 1k ish stone? Do you recommend this 800 over other 1k stones?

@@61spike61 I recommend the ultra Sharp diamond plates, very good high quality plates for the money plus nice and flat. For a 1K ish Stone Naniwa 800 professional or shapton pro 1K. The nanawa is actually slightly finer than the 1k Shapton.

I just can`t justify the Naniwa Pros. They are a lot more expensive than the Shapton Pros (at least here in germany) and everyone I ever asked said they don`t perform that differently.

I've heard Yaxell has some of their finishing work done in China. I think that's why they get so much hate. The majority of work on them is done in Japan.
