Because Brad sells knife sharpeners. These videos are him demonstrating his product for a wider audience than he would get if he just stuck to gun/knife shows, outdoors shows, flea markets, etc... For him, knife sales are probably incidental (and a really small portion of his company's income) compared to the sales of his sharpeners. That's not to say he's never done mini-reviews in sharpening videos, just that knife reviews aren't his primary focus.
