We use a heat gun to shrink the toppers on. Works great. I'm with Kim, I like it a little sweeter.

I’m new to winemaking also but the guy teaching me always uses the wine instead of water for back sweetening. Makes more sense to me as long as you don’t boil it to kill the alcohol otherwise your diluting the wine with that extra water.

Yep I agree with Kim! I love me some dessert wine 😉😆.... I'm not much of a wine drinker either, but when I do drink it I prefer it sweeter 👍... Hopefully after it settles for a while it will be exactly what she wants 👊

"This is her batch". She wants it sweeter. It often will sweeten up for several days as the sugar mixes in more and it usually tastes sweeter if you refrigerator it.

You could make your own custom labels on the bottles or you could use wax and a stamp with your logo.

I was in a grocery store that sold wine over the weekend. I looked for some muscadine wine but didn't see any. We can't raise those grapes here cause of the cold winters. So I may have to get someone to order a bottle for me.

The 500ml bottles look great. Prior to adding back sweetener how are you stopping fermentation so the bottles don’t explode ?

We add a campden tablet the day before and it kills all left over yeast. It's also been sitting for a long time in the carboy and all yeast is pretty much used up

You were in fact spot on in being careful with adding sugar, Shane! Thing is, sugars meld and blend in during the aging process, so it's always good to stop just short of what you think would be perfect while back-sweetening. Speaking from my own experience and the experiences of many other winemakers I know...I can't tell you how many times we went: Yep!! That's totally it, perfect, we got it...and it really was perfect at that time. However, oftentimes you open up a bottle 6 months later....and it can be sickly sweet.

Did I miss something? You backsweetened, but I didn't see how you stopped the fermentation so the backsweetening doesn't restart the fermentation.
