Sheer Khurma Recipe By Delicious Storm
1 liter full-fat milk
1 cup vermicelli (seviyan)
1/4 cup ghee (clarified butter)
1/2 cup sugar (adjust to taste)
1/4 cup chopped nuts (almonds, cashews, pistachios)
1/4 cup raisins
4-5 dates, chopped
Instructions:
Prepare the Ingredients:
Chop the nuts, dates, and keep them aside.
Roasting Vermicelli:
Heat ghee in a deep pan or a heavy-bottomed pot.
Add the vermicelli and roast on low to medium heat until golden brown, stirring continuously to prevent burning. Once roasted, remove and set aside.
Cooking Nuts and Dry Fruits:
In the same pot, add more ghee if needed.
Fry the chopped nuts until they turn golden and aromatic.
Add raisins and fry until they puff up. Remove the nuts and raisins from the pan and set them aside.
Cooking the Sheer Khurma:
In the same pot, pour the milk and bring it to a boil.
Reduce the heat and let it simmer for about 10-15 minutes, stirring occasionally.
Add the roasted vermicelli to the simmering milk and cook until it softens, which usually takes 5-7 minutes.
Sweetening and Flavoring:
Add sugar and stir well until it dissolves completely.
Add the fried nuts, raisins, chopped dates, Mix well.
Let it cook for another 5-7 minutes until the Sheer Khurma thickens slightly to your desired consistency.
Final Touch:
Turn off the heat.
Serving:
Serve warm or chilled, garnished with additional chopped nuts.
