Understanding the clear mechanism would require the use of molecular models. That's why skipped the mechanism part here. In your course you are dealing with fructose based catalyst (which is what I taught) and it delivers the oxygen from beta phase. Just remember this for the time being.

In case of L-fructose the stereochemistry will be reversed

I think this concept is somewhat mistaken, you cant say its Beta only always by simply looking. It depends on how you position the molecule Initially. Competitive steric effect will decide that. H should be placed away, like that. This is misleading I believe
