Recipe
∙ 1.5kg Beef short ribs nice and thick-cut
∙ Only salt
Chimichurri Rojo (Red chimichurri)
∙ 2 Roasted RED bell peppers
∙ 2 tablespoons fresh garlic
∙ 1/3 cup fresh parsley
∙ 1 tablespoon dried oregano
∙ ½ tablespoon chilli flakes
∙ ½ cup Red wine vinegar
∙ ¾ cup canola oil
∙ ½ tablespoon smoked paprika
∙ ½ tablespoon regular paprika
∙ Salt & Pepper
Salsa Criolla
∙ 4 tomatoes
∙ ½ onion
∙ 1 yellow bell pepper
∙ Fresh parsley
∙ salt & pepper
∙ A splash of red wine vinegar
