Therizinosaurus, Giganotosaurus, Quetzalcoatlus, and Dimetrodon were cloned by BioSyn but Atrociraptor and Lystrosaurus were illegally cloned so I don’t think we will be seeing them in-game unless Frontier adds them in. I hope they add them in for free like how they added the Fallen Kingdom dinos and nasutoceratops

The Dimetrodon does have a kill animation for the goat, but it’s so slow that you might need to trap both of them in a small space if you want to see it.

That's a good question. Normally, if the game behaves like the version Frontier gave me... yes you can unlock the species and their skins without having to finish the campaign (I haven't finished it yet by the way).

If you're talking about the incubator exits, those are the in-game cinematics. I don't do anything special with them. The animations are triggered randomly.
