Looks very good. As a child and teenager I hated soup, because my parents would usually make it during Summer. I first started to like soup in 2020, especially on cold days. I fisrt had this type of ramen in 2020 and loved. That chasu looks really good too. I might just have ramen this weekend. Good job Chef CiCi Li. :->

Please help me out here. I guess he took the kombu sheets out just before boiling? Because if you boil Kombu everything gets slimey and bitter...When you make dashi you take it out just before boiling too. So did he fish it out before boiling? Also whats the japanese name for the dried bonito fish slices? I have katsuboshi in thin flakes, these i can only soak for a short while with the gas off. I guess he can leave them in because its a thick and hard slice (The dried bonito being the hardest food on earth). I can not find it anywhere in japanese supermarkets, only katsuboshi in thin flakes. Thanks

@CiCi Li I am still wondering about the Kombu. Does he really leave it in there the entire boiling time? (Without it getting all slimey and bitter? So he does with the Thick Katsuboshi cut? Or does he take it out when boiling is reached ? How much water is used ? Thank you Thank you

Yago Servatius Kombu is a thick seaweed perfect for making broth. It will not dissolve or get bitter. This tare only reduces fifteen minutes. If you want to go longer use a tablespoon of water but do not reduce more than thirty minutes because the base is soy sauce and it will turn into a syrup.

Ghazi Ali you can actually make it. just take a white fish and add eggwhite and puree and spread over plastic wrap in a flat rectangle shape, and take some more and add pink coloring to it and spread over the non colored part roll up and steam and done. just search up how to make narutomaki on youtube and there is videos where they demonstrate

I live in a crap town that doesn't have any fresh ramen noodle in any of the Asian markets. What can I use as an alternative? Maybe order some online?

I looked on Amazon just now. They do offer some fresh ramen noodles but the price could be a bit pricey. You could also try some dry ramen if you really couldn't get the fresh ones.

CiCi Li we do have dry ones, but I was in a ramen shop in a bigger city, and LOVED the chewiness of the fresh noodles. I can't eat instant/dry noodles the same anymore. ; u; I live in a small town, and was in the city for a few days with my bro. I made SURE we visited a ramen shop before going back home the next day... I will most definitely go to more ramen shops, the next time I'm in the city again. How do we store fresh noodles? Fridge? Freezer? How long does it take before they go bad? Like, would we have to eat it all right away? Lol So many questions! Sorry! ♡

Some Japanese cooks on another channel suggested wheat angel hair pasta boiled with baking soda (alkaline) to get a similar taste and texture.

Only use a tablespoon and then immediately wash noodles with hot water afterwards to get off the baking soda because it's bitter.

Ramen noodles are available in Asian supermarkets, the best ones are refrigerated or frozen, but dried ones are also available.

It's Japanese dark soy sauce, it's very different than soy sauces from other countries so it has to be Japanese soy sauce. Kikkoman is the most popular brand in Japan.

So we have two different fondos (sauces) . The first one have: soy sauce, sugar, sake, the oil ( i don't know what a heck is that) i can't listen what she is saying. Ground ginger, ground garlic, the "bonito" fish? the dry fish. If someone can listen the plants names and the oil name i will appreciate it. The second one have: Chicken bones, the seaweed ( i can´t hear the name), dry shrimp, dry ¿? (again i can´t hear), dry ginger, chicken feets. Does anybody know what are the name of the plants that she is using in the decoration dish?

Will it taste the same if its halal? As I am muslim and cannot consume pork or alcohol (Alcohol is okay in food as long as no more than .5% of alcohol is used). I hope the answer is yes. As I still want the taste of authentic ramen. ;'(

There are many, many different types of ramen, and many recipes without pork. My personal favorite is kimchee ramen.

It's an important part of the recipe, (any boned part of the chicken is 'fine' but the feet are the best) you mainly need it for that sticky jelly that just adds an extra blend of flavour and texture, that is if you're going for that unique blend.
