Flour tortillas, cheese, and seafood is an underrated combo. I used to work at a poke place, and my back room special was a fat poke quesadilla, usually salmon and baby scallops

Man! As a Mexican. I rather make myself a shrimp quesadilla with pico de gallo and Louisiana sauce if you wanted more spicy. That’s a delicious poor man’s recipe if you’re going to use flour tortillas.
