Thanks, I had not know about persimmon seed roasting. I did hear of roasting dandelion roots and of course chicory. All of these substitutes might be best mixed together since they don't quite reach the level of real coffee. Or maybe in addition to the coffee as an extender. Green coffee beans are said to last indefinitely - so you could roast as needed. During a temporary emergency such as a snow storm or a hurricane I use the individual packets of freeze dried coffee so that I won't need to break the seal on my larger glass jars. I miss Brim and Maxim...

Store organic whole bean coffee in your FREEZER!! The whole bean is better, because stores for much longer. Simply grind your whole beans and you're good! I have coffee stored in the freezer for over a year and it's fine!!
