I come from a long line of southern cooks who can and freeze just about everything but this is a new one on me. I guess I will be forced to give it a try and take it to next years family reunion. (salt pork is a must)

Yep, you are cooking them after they are dried so it would kill anything on the beans anyway. Thanks for the comment!

My husband agrees with him. I have a dehydrator, and when I tried making them in it, they held onto their green color better, but the flavor was not the same at all..The green staying in there, instead of going brown, somehow affected their flavor.. so I went right back to my white, quilting thread

brown paper bags is the best to store them in and the pepper is good or throw a bay leaf in the bag.

Cool, I seem to remember my grandmother doing this when I was growing up in North Carolina. I haven't had any in years! Question though: Would frozen green beans work? I would like to try this and don't have a garden.

Frozen beans do not work well with this method. Check your local farmers market or the fresh produce section of a local grocery store. Frozen beans work well in a food dehydrator but will have a completely different taste than beans dried using this method. Thanks for the comment!

dont hang em on the porch if the humidity is too high or its raining.. I hang mine in the closet where my furnace is . If the weather is good like in September when the humidity goes down then the porch is the place .. LOL

Yes sir, any type of green bean will work. I have used peanut, white half runners, mountain cut shorts, blue lake. They work best when the bean inside the pod is still young but are still fine with mature beans. Thanks for the comment and thanks for watching!

Thanks for the fine video. My grandmother was from the south and I remember her telling about leather britches beans. Guess I always thought they were some special kind of bean to dry and not a regular green bean. What are October beans then?

The best ones are called "greasy beans" they are an heirloom stringless variety.

The way Grandma said, the October beans were shell beans and it was my understanding the leather britches were put up green and dried and then they reconstituted themselves when you parboiled them.
