Also could superheavy lift the entire Shuttle stack, like this but including SRBs haha, would it have less or more ∆v?

Not if the SRBs are on the top - that's 2030 tons total and SH can't deal with that. Move the SRBs to the side of SH, though, and that might help.

EUS is a bit small as a pure upper stage for SH and it can't fit in Starship. An extended Saturn V second stage, as another comment suggested, is a bit better.

I'm sure PEKKA's working on it, but personally, while I can land stuff like Falcon 9 in Realism Overhaul, it's not to the precision that's required for this. I mean, I guess I could randomly manage it once, but not consistently. It would be easier with stuff like stock reaction wheels, full range throttling, or just having infinite fuel on at some point, of course.
