That has to be the best explanation of Poolish yet. I've been learning to make pizza for about a year and steered away from sourdough and Poolish because it all just sounded complicated and a faff but 100% hydration with honey and yeast in the fridge I can do. Nice one Si! Oh, and did I hear a slight use of an Italian accent when you said Mozzarella and Passata? Knock it off. hahaha! 😂🤣😂

Can't wait to try this! YEARS ago my Gran used to make me Welsh Eggs (leek mash, cheese sauce and eggs). Its a hairy bikers recipe I think from one of the TV shows. I've been looking for that recipe for such a long time and can't find it. Any ideas where I can look for it? Thanks :)

Where was the honey introduced? Recipe in the description calls for caster sugar, but there's no mention of it in the video.

It's a pre-ferment (which is a LOVELY idea) and will help your pizza's taste fantastic but it's not a sourdough starter. It just might confuse people if you say. it is sourdough.

Si, does say that it is a poolish version, hence the 'cheat's sourdough'
