Caponata is a Sicilian recipe. A recipe that smells like summer! It's a kind of ratatouille to eat cold, on a slice of toasted bread with olive oil. Here I offer you my family recipe (my dad's recipe). We keep the base of the traditional Caponata recipe but add our personal touch. Some also like to add almonds and/or hazelnuts. This recipe is pure bliss! You can dip the raisins in Marsala (it's even better), I just didn't have any on hand. Good tasting !
Ingredients :
1 large eggplant
2 stalks of celery
1 or 2 large white onions or 4 small ones
Optional: 1 red onion
35g capers
50 g green olives (1/4 cup)
50 g raisins 1/4 cup
Optional (because it gets very expensive): 30 g pine nuts - 1/4 cup
3-4 tomatoes
1 red pepper
50 g orange blossom honey (preferably) - 2 tablespoons
50 g white wine vinegar or cider vinegar - 3 tablespoons
1 tablespoon of bitter cocoa
Basil
