That is not an original recipe it does not have sesame seed oil or Tahini if you're going to make it original all you need is pumpkin seed tomato onion and chili habanero and if you like you can put cilantro sikil paak means tomato and pumpkin seeds

In our home my grandma and mom used to make it very simple, still delicious, only tomatoes, cilantro, pumpkin seeds grounded, and salt. Sometimes adding habanero but spicy sauce was usually apart. Mayan foods are very simple.

I went to Frontera Grill (one of Rick' many restaurants in Chicago) and decided to order the sikil pak as an appetizer because I had no idea what it was and wanted to try something new. It absolutely blew my mind so I went on KZbin to see how to make it myself. Then I see that Rick HIMSELF uploaded his own recipe! I was so excited! Can't wait to make this at home

The original salsa. The Mayan created the first salsa, Ha (water) Sakil (pumpkin seeds) P'ak (tomato). Mayan habenero was also used, but this salsa was not considered spicy. Squash was often added. Mayans grew a lot of squash. Anyways, all this changed when Spaniards conquered. Salsa evolved into the spicy hot peppery stuff we have now.

Rick any chance you could pot a pumpkin mole sauce? I have only found one on KZbin and it does not look like the pumpkin with duck I have had in the past which was a shade of green. thanks again for your sharing your cooking or us.

You can cook it and puree it for pumpin pie filling. A mexican use for it would be to boil it with sugar. Basically candied pumpkin. If you do the candied pumpkin look up a recipe because it is not that simple as pumpkin with sugar. Dulce de calabaza

This recipe is not accurate at all, in Yucatán we don't use Tahini or sesame seeds and definitely we never never add orange juice. This recipe supposed to be very simple, is just tomatoes with pumpkin seeds, onion and cilantro and some habanero pepper for the brave. Is really sad to watch how some people scam others with "mexican" food.

He said it "was sort of like " Yucatan Hummus. Cooking and recipes are always evolving based on how often and by how many iterations have come before . Fusion cooking\cuisine would not exist if the parameters are set by so-called accurate recipes. That's why it's called "The Art of Cooking"

Mr. Bayless, I do not understand how you can alter an ORIGINAL Mayan recipe: You are not being honest with the people who watch this video. The ORIGINAL one is something different. NEVER: lime juice. NEVER: orange juice. NEVER: tahini. NEVER: a can; we use FRESH tomatoes roasted on a COMAL or griddle, but a can??? NEVER habanero sauce from a bottle!!! We use a FRESH habanero hot chile roasted on the griddle, pealed, and streeped. How dare you change the ingredients of a very simple delicious and famous ORIGINAL fresh sauce. If the recipe on the video was made up by you, then tell your followers the truth, that you are the inventor, but do not tell a fake story about the Peninsula of Yucatan and the Mayan food, please. Not nice of you.
