Sorry for the very late reply! Perhaps you found it out already or clicked on the video description?! In any case: turn your back against the air-screamer and wait until it descends. Then do a quick turn while holding down the aim button (default R2) and slash away with the knife. This trick is very frame specific and requires a bit of practice.
