How long do the bunches/leaves last once they are dried?

To make a garland can you make the bunches and leave them in water? Would it dry?

Thanks for the information. Please help me. The eucalyptus is getting a thick fungus or mildew in the powder room. Is there something I can spray on it to prevent this from happening.
