A block of stone is shapeless, formless, hard, and unfeeling. The subject of the song took this object and shaped it into a heart - something capable of emotion and feeling. Basically, without whoever the song is about, he'd still have a block of stone in his chest rather than a heart. This person brought love and meaning into his life.
